Etna Rosso "Feudo di mezzo"


Alcoholic fermentation took place at a temperature of 25° for 7 days, pumping over, with a short maceration.

The rosso etna wine was then put into a 500 litre barrel for malolactic fermentation. The barrel is a third passage from the tonnellerie Cadus, with a medium toast. The wine was aged for 12 months.

 After ageing, the wine was bottled with only 20 mg/l of sulphites added to stabilise the wine.


The Rosso Etna wine was aged in December 2020 and then left in bottle for 6 months before being sold. The production of rosso etna wine is 654 bottle



The colour is a garnet with aromas of black cherry, pepper, cinnamon given by the ageing process with a note of flintstone.

The palate is light, fresh with red fruits such as cherry and raspberry, and a persistent mineral finish given by the volcanic soil.


Fillet of beef Simmenthal with a sauce or pepper, agreement in can more original: Tuna of the Mediterranean with a reduction sauce in the red wine onion of tropea and sesame.
